Caramelised Pear & Cinnamon Pancakes

A warm and sweet pancake recipe, perfect for the whole family to enjoy this Autumn!
 
 
 
 
  
 
Ingredients
 
Pancakes
250g self raising flour
50g caster sugar
250g milk
1tsp vanilla extract
1tbsp cinnamon
Pinch of salt
Butter for pan
 
Gluten Free Pancakes
1 1/2 cup gluten free plain flour
1/4 cup caster sugar
1tsp baking powder
1tsp baking soda
Pinch of salt
3/4 cups milk
1tsp vanilla extract
1 large egg
Butter for pan
 
Caramelised Pear Topping
1 pear
1-2 tbsp cinnamon
2-3 tbsp butter
1tbsp caster sugar
1tbsp brown sugar
Pinch of salt
Drizzle of honey
Whipped cream & pecans for topping
  
Method
 
Pancakes
Mix all ingredients into a bowl and whisk until combined. Add butter to pan and set on medium heat until butter is melted. Pour pancake mixture and fry 2-3 minutes before flipping. 
 
 
Caramelised Pear
Add butter to pan. While melting, peel pear and slice into thin chunks. Add pear slices to pan with cinnamon, sugar and honey. Make sure to flip often to prevent burning. Cook 2-3 minutes on each side until golden.
