Roasted Tomato & Red Pepper Soup

A smokey and flavourful tomato soup that pairs perfectly with a grilled cheese or toasted crostini. A warm, Autumnal soup that will leave you feeling so cosy!
 
 
Roasted Tomato & Red Pepper Soup
 
Ingredients
    
 
6-8 tomatoes
1 red pepper
1/2 red onion
1/2 white onion
1 head of garlic
Salt
Pepper
Sweet paprika
Oregano
Olive oil
Chicken or vegetable Stock
Fresh basil   
 
 
Method
 
 
Chop your tomatoes, pepper, onions and garlic and set on tray before seasoning generously. Bake in oven at 180C until everything is soft (around 20 minutes). Add your stock and blitz until smooth. Add to a pot and simmer on medium heat before adding fresh basil and cream if desired. Top with pepper and a drizzle of olive oil.
